Pressure canning Chicken

I would like to pressure can all of the extra Roos this year. I know some here have done it (Monika, Debbie, I hope you are reading this). My hope is to raw pack the meat. Maybe even with the bones. How much water do you add? Do you put in a little salt? My goal is to have nice, tender meat, but also beautiful stock. Recipes/ procedures would be most appreciated! :please:

Hope this link helps.  I haven't canned chicken, but I love canned chicken and usually buy it from the grocery store (canned whole).  But I have canned beef stew and spaghetti meat sauce.  Good Luck and can't wait to read your results.... pics would be nice too.  :thumbsup:

Lets see now, if my memory serves me, we decided to raw pack our chicken parts last year. We cut off the legs and thighs and also the breasts. That was set aside while we prepared the remaining carcass' in a roasting pan with whatever seasoning we had handy and some nice veggies too. I prefer to use the same seasoning as if I was roasting a whole chicken, so poultry seasoning, sage, thyme, seasoning salt and onion. Added some water, sorry we didn't measure last year and I did up one batch of just stock this year and added too much water so really wishing we would have measured, as I didn't get the same results this year. Although very tasty it was not as gelled. Anyhow, back to what we did last year ... we covered that and roasted it for a very long time as we worked on the other chicken parts and went out for lunch :P The chicken parts we put into the jars, we used some tall (1 L) jars because I believe we had a turkey we were processing as well. The breast meat we cubed and raw packed. After the roasting was done we picked meat from the bones and canned that as well with juices from the roaster. From there my memory kinda gives out a little but I know we followed the directions for pressure canning meat the raw pack method in the recipe/instruction book that came with the pressure canner. And followed the cooked meat recipe in the same booklet for the meat and broth. I can certainly add that here too Susan if you like. Wasn't sure how much detail you wanted :P  Now I have to tell you that neither Debbie or I really like the look of the bone-in pressure canned chicken, kinda well ... unappetizing to us. Also I didn't like the texture of that meat :huh: too mushy for me! The broth though was fantastic and I will forever do that anytime I can!! The cubed breast meat was good for use as 'flakes of chicken' for sandwiches if mixing it with mayo or the like. Let me know if this is what you wanted to know my dear and I will be happy to clarify or add anything you like.

Wanted to add a bit of info for you. We did not add any liquid to the bone in raw pieces as they made there own liquid while being pressure canned but we did cover the cubed breast meat with broth from the roaster as there was no fat or anything to help it make a liquid, also the meat that we picked form the bones we also covered with stock for the same reason :)
